Where does your passion for wine comes from?

It seems to me that my passion for wine comes from observing my parents when I was young.
I could see that they took a great deal more pleasure in tasting the wine than they did in drinking it.
I was really looking forward to being old enough to discover this world which intrigued me so much.

As my life moved on, I discovered many good wines. The objective, however, was always to share a good time with family or friends, it was just a personal experience and at that time I had no idea of becoming a professional in this (environment) field. A little later on I found my first job at Pernod Ricard. My objective was to discover a little more about festive products because what I love above all this is conviviality! It was a good way to discover the world of wine. Then I found jobs in food industry professions which allowed me to work in beautiful restaurants but above all to meet people who were passionate about their professions, as the saying goes: Good food, good wines! Today I am very happy to be able to introduce others to this world that I particularly like in a festive and friendly atmosphere.

What is your favourite type of wine?

Ah! That’s a very difficult question to answer and you know why? In my opinion, it depends on many things. We do not all appreciate a wine in the same way it all depends on when we drink it, with whom we drink it, as well as with what we drink it! A wine may not have the same flavour depending on the circumstances in which it is tasted, especially in terms of climate… Being based in Provence, even if I am very fond of Bordeaux and Bourgogne, I must admit that the more time goes by, the more I like the wines of Provence and Languedoc-Roussillon, in short, to get out of the « classic » tastes. If I had to give you an example, I would give you Domaine Richeaume, a Côtes de Provence Sainte Victoire, PGI appellation, a wine different from what you generally find!

If you had to choose another alcohol than wine, what would it be, and why?

I would say Whisky because one finds the same configuration as with wine, especially in terms of terroir, odours or tastes depending on the seed used whether it is peaty or not. Moreover, we find a real tasting job and I love it! I also tell you about a Minorca Gin that I discovered last summer in the Balearic Islands, it rocks!

What is your favorite wine and food pairing?

First of all, it depends on the season again. In winter my choice would be a wild boar stew served with apple and redcurrant compote a red wine, Châteauneuf du pape, all around a cozy fireplace, yum… a real delight! For the summer season, a must: Mediterranean salad with products from the south, mozzarella, olive oil or tapenade, kss kss kss kss do you hear singing cicadas? For the choice of the wine a good gastronomic rosé not too light.

Why should you be interested in Provence wines?

The advantage with the wines of Provence is their great diversity. There are 5 or 6 different appellations in this region that produce very different wines all with magnificent landscapes. Let’s not forget that wine is savoured with all the senses. And it goes without saying this is one of the most beautiful regions in France!

We meet again very soon for the next part of the brice interview so stay alert !
